These are weeeeeird. And good. Just….weird. But good!

Ingredients

- 1 c flour

- 1 egg

- oil

- salt, garlic powder, coriander

- water

- green beans

Directions

1. Mix the flour, egg, oil/butter, salt and spices. Add water until you get a thickish pancake batter.

2. Wash green beans, cut off the ends and add to the batter.

3. Heat oil in a pan and add the batter covered green beans. If the batter is somewhat thin, just add some more on top of the greenbeans in the pan. It’s okay if it spreads out. Fry until one side is crispy and then flip.

4. Eat with ranch dressing!

This one of the tastiest meals I’ve made in a long time. The pilaf seasoning is the seminal ingredient. I bought it just as ‘pilaf seasoning’ in the market, but I bet it’s pretty similar to this

Ingredients

- dried giant lima beans

- dried lentils (any colour)

- chopt onion

- chopt tomato

- olive oil

-pilaf seasoning

- dried couscous or pilaf

- salt

Directions

1. About six hours before you want to start cooking, start soaking the lentils and limas. Be sure to put them in plenty of water.

2. Cook the limas and lentils, adding the lentils about 20 minutes before the limas will be done. Meanwhile, fry the chopt onion and chopt tomato in olive oil.

3. When the limalentils are done, drain them and add them to the frying pan. Mix in some pilaf seasoning and cook it down on low heat, allowing the lentils to mash up as you stir it.

4. Cook the couscous or pilaf (pilaf will take longer to cook). Add the contents of the frying pan to the couscous or pilaf, add salt and enjoy!

I made this recipe because

1. I love breakfast.

2. I love cookies.

and 3. I love trying to be healthy (most of the time).

Healthy breakfast cookies jive all these loves together. They’re healthy enough and big enough to eat just one for breakfast with a piece of fruit and be satisfied. They are also good for making ahead, freezing or frigerating and then reheating. It makes six big cookies.

Ingredients

3 c oats

1.5 c flour

1.5 t salt

2 t baking powder

2 small mashed bananas (Ghana-sized. One American-sized banana would do)

2 eggs, beaten

5 T oil

1/2 cup brown sugar

3 t maple flavouring

2 t vanilla flavouring

raisins, groundnuts, ground flax, cinnamon, cloves, nutmeg (not too much!)

Direction

1. Mix mashed banana, eggs, brown sugar, flavours and oil.

2. In another bowl, mix oats, flour, salt and baking powder.

3. Mix wet and dry bowls together and then add raisins, groundnuts, flax, cinnamon, cloves and nutmeg. If the mixture is too dry, add more oil. Batter should be cohesive enough to form into patties.

4. Form into six big patties and cook in a covered nonstick frying pan on very low heat. Flip.

This is just the recipe that I cooked up – it can be totally adapted to your liking. You can increase or decrease the sugar, add other kinds of mashed up fruit or dried fruit, other kinds of nuts, cocoa powder, different kinds of flavours and spices, whatever! Just keep the base of oats, flour, salt, baking powder, eggs and oil and then do what you want! You might also be able to bake them, I’ve just never tried. Enjoy breakfast!

Well, I just spent a month traveling around Ghana and then Burkina Faso and Mali, so not much cooking went on save for the one dinner I made here with my family when they visited. The rest of the month was spent eating out/eating street food/experiencing the culinary wonders of Francophone West Africa. Long story short, they have amazing baguettes, even more amazing[ly cheap] yogurt, and inexpensive hamburger joints EVERYWHERE! Not to mention couscous. And lots of rice.

They also have several different varieties of fried doughballs, so I was never at a lack for bowfruit. When I got back, the first thing I did was buy and eat a lot of fresh vegetables. They don’t eat those much in our Northern neighbors either. But then I came home to find a BUNCH of green beans waiting for me in my garden! And a good amount of lettuce too! So that was a pleasant surprise. I made a balsamic vinaigrette dressing for all the rabbit-food goodness, and also made a BLT on a smuggled baguette from Burkina, using the REAL bacon bits my dear Rounds relatives sent me. It was so good.
